Tahini Soup without Oil

On Good Friday, a day of strict fasting that requires abstaining from oil, traditional dishes are prepared with simplicity. One such dish, particularly in Crete, involves cooking greens with snails and dressing them solely with vinegar. Additionally, another notable dish for the occasion is the oil-free tahini soup, typically crafted with two-grain wheat or maize flour (Zea).

Ingredients:

  • 1 cup crushed wheat
  • 5 tablespoons sesame paste (tahini)
  • Salt
  • Water

Procedure:

  1. Place the crushed wheat in water with a pinch of salt and allow it to soak overnight.
  2. The following day, put the soaked wheat and salt in a pot of boiling water, and boil until tender for approximately 15 minutes.
  3. Next, add the sesame paste to the pot after diluting it with a bit of broth from the cooking liquid. Stir well and allow it to simmer gently.
  4. Serve the mixture as a soup. For added flavour, consider incorporating lemon juice before serving.
