Cretan pies stand out for their seasonal fillings, distinctive shapes, delicate closures, and traditional baking methods, making them a culinary treasure that reflects the rich flavours and traditions of Crete


Ingredients for the dough:

  • 1 kilo all-purpose flour
  • A pinch of salt
  • 1/4 wine glass of olive oil
  • 3/4 wine glass of raki
  • Juice from a small lemon
  • Water, as needed (approximately 1 glass)

Ingredients for the filling:

  • 1 kilo homemade mizithra cheese
  • Chopped spearmint
  • Optional: a small amount of sugar

Procedure:

Step 1: Dough Preparation

Place half of the flour in a bowl, create a small well, and add the dough ingredients. Mix well and gradually incorporate the remaining flour. Knead the mixture until it forms a medium consistency dough that doesn't stick to your hands. Cover the dough with a clean cloth and let it rest for about an hour.

Step 2: Filling Preparation

In another bowl, knead the mizithra cheese by hand. Add the chopped spearmint and mix thoroughly.

Step 3: Assembly

Roll out a thin sheet of dough. Using a small saucer, cut round pieces from the dough. Place a spoonful of the prepared filling on each piece and close it in the shape of a crescent moon. To prevent the mizithra cheese from leaking, press both ends of the dough together well or use a fork to seal.

Step 4: Cooking

Heat olive oil in a pan. Fry the mizithropites for 1 to 2 minutes on each side, or until golden brown.

Serving Suggestion: Serve plain or drizzle with honey for added sweetness.
