Nerati Mizithropita, the quintessential pie of eastern Crete, was an indispensable delight on the festive home tables and lavish carnival spreads of the final Sunday of Carnival.

This round pie boasts a soft dough infused with xinomizithra (type of whey cheese). To prepare, the pie is spread out in the pan and expertly kneaded with fingers, periodically dipped in water, until the dough evenly covers the pan and the xinomizithra is spread throughout the pie.
