Ingredients:
Two handfuls of lemon blossoms
1 glass of water
Two handfuls of sugar
Flower water
Lemon juice
Procedure:
We meticulously gather lemon blossoms, selecting only the finest white petals, ensuring their purity.
Bring water to a boil in a pot and blanch the lemon blossoms.
Afterward, put them in a sieve and let them drain and cool down thoroughly.
Once they have cooled, put them in a small baking pan.
To preserve the whiteness of the lemon blossoms, begin by sprinkling them first with flower water and then with lemon juice. Allow them to sit for several hours to remove any bitterness, as the old housewives used to advise. Once the bitterness has dissipated, boil water and two handfuls of sugar in a clean pot, then let the mixture cool before adding the lemon blossoms. Allow them to soak overnight. The next morning, return the pot to heat and simmer until the syrup thickens. Finally, add juice from half a lemon to maintain the dessert's freshness. Allow the spoon sweet to cool slightly before transferring it to a glass bowl with a lid.
