
Ingredients for 5 servings:
- 1 kilo of pumpkin, diced
- 2 kilos of thickly sliced onions
- 1 cup of olive oil
- 1 glass of white wine
- Bay leaves
- 1 teaspoon of cumin
- Salt and pepper
Procedure:
We start by preparing our ingredients. Heat the olive oil in a large pot until it's hot. Then, add the onions and sauté them until they become soft and translucent. Next, pour in the wine and let everything cook together for around 30 minutes, allowing the flavours to meld. Finally, introduce the diced pumpkin, along with the bay leaves and a glass of water, to the pot.
To finish, sprinkle in the cumin, salt, and pepper to enhance the flavours. Reduce the heat and let the stew simmer gently for approximately 30 minutes. If needed, you can add a little more water to achieve your desired consistency.
Avoid using a spoon to stir the food; instead, gently shake the pot in a circular motion to ensure even cooking and to prevent the ingredients from breaking apart.
